Scottish Lemon Meringue Pie Cocktail

I’m delighted to be collaborating with Aldi Scotland, we’re shaking things up for British Pie Week, using premium, locally sourced Scottish ingredients from Aldi Scotland.

Ingredients

  • 50ml Scottish Comhla Gin.

  • 50ml Limoncello.

  • 20ml McCallums Scottish Single Cream.

  • 30ml Fresh Lemon Juice.

  • 10ml Simple Syrup.

  • 5ml White Wine Vinegar - the secret ingredient for perfect peaks.

Method

  1. Fill a glass with ice.

  2. Add the ingredients and stir gently to combine.

  3. Serve straight away.
